Get ready for zingy flavours and the freshest fish. As pioneers of ‘Kinilaw’ (flash-cured fish and seafood), there are plenty of punchy hits on our menu, with specialties including Sea Bream with papaya, coconut milk, and kalamansi ponzu, Tuna Tartare with cucumber, torched peach, and lobster crackers, and Jersey Oysters with ginger and jalapeno salsa.
The on-point ‘Inihaw’ (chef’s skewers), prawn, rib eye, chicken thigh, and pork are served with pickled salad and homemade dips. Highlights include Prawn with cucumber, pineapple, garlic, chilli, coriander, lime fish sauce, and Rib-Eye with red onion confit butter, lemon juice, soy, and Don Papa peppercorn sauce.
